Dessert break

I was absolutely craving sweets this entire week. Plus, we had guests over for another night of board/card games (my faaavorite time of the week!). I broke my paleo-at-home streak to make some kitchen frou-frou :). Egg custard and coffee jelly are on today's menu. These recipes are quick and easy and without a big mess. Hope you try them out!

Egg Custard (Flan)
Adapted from Cooking with Dog - I'm a long-time fan, making their bento in high school. The custard was so fluffy, and it got engulfed by my guests :)

Ingredients:
2 eggs, whisked
1.25 cups of light coconut milk (mine's from Trader Joe's)
4 Tbsp of sugar
unsalted butter
4 ramekins

Caramel sauce (see a paleo version here)
3 Tbsp sugar
2 Tbsp water + 2 spoons of hot water

Instructions:
1. Butter the sides of your ramekins
2. Make the caramel sauce by heating on medium the sugar + water. It should be bubbling and when you notice the color going from clear to yellow to brown, pick your sauce pan up and swirl it around. Add 1-2 spoons of hot water to control the temp/prevent burning. Pour sauce into the bottom of each ramekins
3. In the same sauce pan, heat coconut milk + sugar until boiling.
4. While continually whisking the eggs, slowly incorporate the milk. I let the the milk slide in from the side instead of pouring directly onto the eggs. The custard should be milky yellow!
5. Pour the custard into the ramekins. Cover with foil.
6. Heat a pan with 0.5 inch of water until simmering. Add a paper towel at the bottom and add your ramekins.
7. Steam for 20 minutes.
8. Refrigerate or freeze until ready to serve.
9. Invert to serve.

Coffee Jelly
This takes me back to the herbal jelly + condensed milk I used to eat as a kid!


Ingredients
1 cup fresh & hot coffee
1 Tbsp gelatin + hot water
Coconut milk
Caramel sauce from above (or use Paleo-friendly substitutes: honey, maple syrup)

Instructions:
1. Soften/dissolve the gelatin in hot water. It'll take about 5 min.
2. Add your coffee to the gelatin and mix it well.
3. Pour it into a square container. Refrigerate until solid.
4. Cut into cubes and add your coconut milk and syrup for a refreshing way to get caffeinated!
