10 Minute Recipe #2: Mushrooms and Chives

This Saturday, I treated some good friends with home-cooked lunch for a mini birthday celebration. The menu focused on vegetarian  items, and one of the items was mushrooms and chives. It was another simple and healthy dish, good for the soul and digestion. 


Mushrooms & Chives
Chives
Shiitake mushrooms
Enoki mushrooms
Trumpet or oyster mushrooms
Hoisin sauce
Soy sauce (I use Lee Kum with less sodium)
1 garlic clove

Instructions
1. Slice the mushrooms, and separate the enoki mushroom strands.
2. Cut the chives into 1/2 - 1 inch pieces.
3. Mince garlic and add to a wok of heated oil on high. Stir-fry until aromatic (10-15 sec).
4. Add mushrooms and chives to the wok; stir-fry for 1 min.
5. Add 2 Tbsp of hoisin sauce, 1 Tbsp of soy sauce.
6. Stir-fry for 3 min and plate! You might need to drain a bit of the exudated water.
