Cooking with Chef Roger

One of the must-dos before graduating Rice; our head chef generously offers this course to students each semester so we can learn basic cooking techniques and recipes. On our second day, we got a copy all of his recipes for the semester! Something about the personal compilation of a chef's menu really says hello there! you look tasty :).



After seeing some groups make fresh bread, I decided to make it a goal of mine to do likewise. I didn't bring a camera (mental sticky note) but our group made a fiiine chicken noodle soup. It was the best thing that entered our stomach that icy cold night.

new vocab:
mirepoix - celery + carrots + onions
veloute - roux + stock
roux - 1:1 flour:butter (by weight) thickening agent
